  • ·Eggs (separated)
  • ·Sugar
  • ·Strong coffee, cooled
  • ·Ladyfingers
  • ·Cocoa powder

method

How I make it

  1. 1.

    Whisk yolks and sugar until pale; fold in mascarpone.

  2. 2.

    Whip whites to soft peaks and fold gently into the cream.

  3. 3.

    Dip ladyfingers briefly in coffee and layer with cream.

  4. 4.

    Dust with cocoa and chill overnight.
