What you’ll need
- ·Spaghetti
- ·Eggs (2 yolks + 1 whole)
- ·Pecorino romano, grated
- ·Guanciale, diced
- ·Freshly cracked black pepper
method
How I make it
- 1.
Cook pasta until al dente; reserve some pasta water.
- 2.
Crisp the guanciale slowly in a wide pan.
- 3.
Whisk eggs with pecorino and a heavy pinch of black pepper.
- 4.
Off the heat, toss pasta with guanciale, then the egg mix — quickly, with a little pasta water, until silky.
